90 % of the Umbrian oil is of "extra Vergine" quality. It is produced with the simple pressing of the olives, which are already cultivated since the time of the Etruscan on the sun-illuminated hills Umbrian’s. Loam and calcareous earth and special climatic conditions make slow maturing of the fruits possible, which have an extremely low acidity. Today the olive oil “extra Vergine” is distinguished with the quality descriptor Denominazione di Origine Protetta, D.O.P. "Umbria". Olive harvest in Umbria

between November and December in Umbria are harvested olives. Olives mature are by hand harvested, when large nets under the trees were spread, in order to avoid loss and to simplify a gathering of the fallen down olives. The olives are laminated in wooden cases and brought to pressing into the oil mill. Here the olives are weighed and washed and afterwards to a pasted, which happens traditionally with a stone mill. The olive paste is laminated on mates of reed and pressed then. The olive liquid is hurled, in order to separate the oil from the water. From the first press one receives the first and best oil, the "Extra Vergine” (purest olive oil).
